How can we tell how many real subscribers a channel actually has?

There’s a general rule that works for most channels: ⭐

Take the number of views on a post from 1–2 days ago and multiply it by 10.

For example, if a channel claims to have 10 million subscribers, it should be getting at least 1 million views per post. If it’s getting way less, the rest are probably fake.
If it’s getting more, that means users are sharing the channel’s posts a lot and the members are highly active.
