Starting a Ginger Bug
This is just the beginning. Together we will go through all sorts of ways on how to use this for ginger ale, ginger beer, inoculating wild sodas and more! Stay tuned :)

This ferment is extremely easy and is a great starter ferment for anyone getting into the world home fermentation. All it requires is some filter or spring water, fresh organic ginger that’s been rinsed, and a sugar source, such as cane sugar, light brown sugar, brown sugar, maple syrup, honey, or agave syrup. Stevia, or other chemical sweeteners won’t ferment as they are not carbohydrates and not a sugar source therefore, they lack calories and will not feed the microbes in your ferment

Ingredients:
1000 g of filtered or springwater
70 g of your sugar source of choice if using maple syrup, honey you may want to boil it for a few minutes to kill off any microbes that are in those sugar sources so that you’re with just the sugar and the microbes on the ginger being the predominant probiotic in this ferment and you may want to use a little bit more because they do contain water and so your ratio will be a little off as I am using a 7% sugar to water by weight ratio
1/2-1 cup of rinsed, shredded organic ginger

Recipe:
combine all of the ingredients in a jar, shake until the sugar is dissolved and let’s sit out at room temperature for a few days.
