History of coffee

There is a legend that coffee originated in the IX century in Ethiopia when a farmer saw that his goat ate a coffee plant and was much more productive than other goats. However, this story has no conclusive evidence.

The first evidence of coffee comes from the 15th century when Sheik Omar was banished from Moka in Yemen to the Ousab Cave (Wusab). As Omar was starving, he took the berries from the nearest bush he found but they were very bitter. He tried to fry them to improve the taste, but the berries became even harder. Then he even tried to boil the fried berries in water, which resulted in the creation of a dark drink. Omar tasted the drink and was delighted with its action. Soon the news spread and Omar was returned to Moka where he was canonized.
Dire Straits were a British rock band formed in London in 1977 by Mark Knopfler, David Knopfler, John Illsley, and Pick Withers. They were active from 1977 to 1988 and again from 1991 to 1995. Dire Straits are one of the world's best-selling music artists, with album sales of over 100 million.
Growing coffee

As far as coffee cultivation is concerned, there are two types of coffee that stand out, namely Arabica and Robusta

Arabica - The first type of coffee ever drunk and for many people the best type of coffee. Arabica has a very pleasant smell and taste. About 60% of today's coffee production belongs to this type.

Robusta - The second type of coffee by production, and on average occupies 40% of today's total coffee production. It is mostly used for making instant coffee and espresso.
The process of making coffee

Coffee berries go through many processes until they reach the familiar look of roasted coffee. Coffee berries are first picked, then peeled, sorted and finally left to ferment.
After the fermentation process, the coffee is rinsed with a large amount of water to wash away the fermentation residue. Then the grains go to drying. After drying, the coffee beans go on to the process that we will present in detail below.

Coffee roasting is a process in which coffee beans are roasted in a pot on a heat source and their physical and chemical composition changes.

After each phase of roasting, the coffee beans go for grading and sorting. Each coffee bean is inspected and sorted by color.

Coffee is best stored in containers made of ceramic or glass to prevent air from entering. This helps keep the coffee fresh to use.
